201 BEAN TO BAR CLASS

Duration: 3 hours
Location: 7515 Harwood Ave. Wauwatosa Village.
Time: 1-4pm Please arrive 5 minutes early to get settled
NOTE: You do not need to take the 101 class first in order to take this class.
An in depth hands on experience in chocolate making lasting approximately 3 hours. You will have a chance to see the magic of bean to bar chocolate making by doing the steps to make chocolate. Keep in mind that it takes a week for us to make a regular batch of chocolate, so we will be condensing that into 3 hours.
Finally we will go on a world tasting tour that explores the unique flavour profiles of single origin chocolate. Students will dive into our techniques for flavour development and production. Working in pairs, students will formulate a single-origin or blended dark chocolate. You’ll leave with three bars of chocolate that you poured, as well as about a pound of finished, untempered chocolate that’s great for nibbling or baking.

Do you make the chocolate by hand?
Yes. Once the beans arrive at Tabal Chocolates we sort, roast, crack and winnow, grid, conch or aerate, temper, pour into molds, then wrap each bar by hand.
Where do you get the cocoa beans?
We get the beans through our communities in the Dominican Republic, Costa Rica, Columbia, Nicaragua, and Peru.
